Vincenzo was born in Campagna, Italy. He studied at the Professional State Institute of Hospitality Services and Public Catering in the town of Roccaraso, graduating with a triple diploma in food preparation, marketing and IT in the tourism industry, and restaurant service technology. He also studied at the Higher School of Culinary Art in Venice.
He gained valuable experience in restaurants and hotels in the Italian provinces, each of which has its own rich gastronomic traditions. As a result, Vincenzo’s cuisine is highly diverse and unique.
In 2005, Vincenzo left Italy, and for over a year worked at one of the top hotels in the U.K. before moving to Russia.
Vincenzo’s first experience of working in Russia was as a chef at the Italian restaurant Enoteka Divina, located in the building of the State Hermitage in St Petersburg. He went on to work at the best hotels and restaurants of St Petersburg and Moscow.
In November 2009, Vincenzo Squarciafico took charge of the kitchen at Rossi’s restaurant in the Grand Hotel Europe. The main tenet of his culinary prowess is the use of high-quality ingredients made by the finest companies in Italy for the most famous Italian restaurants in the world, including unique Irpinia homemade pasta.
One of Vincenzo’s favourite dishes to serve up is spaghetti with seafood, and his favourite herbs are fresh basil and oregano. The restaurant’s interiors are now decorated with artistic compositions of pasta and herbs of the kind popular in Europe, which Vincenzo designs and creates himself.
His culinary skills have already been highly rated by stars such as Gwen Stefani and Giorgio Armani, who recently stayed at the Grand Hotel Europe.
