New Rossi's Restaurant Italian Chef Filippo Licata

Filippo Licata has been appointed as the new executive chef at Rossi’s Restaurant.
 
Family passion brings Filippo Licata on the cookery path. Of Italian nationality, born in Belgium, he graduated from Hotel Business School of Brussels. There, Filippo increased his culinary skills by working in several Michelin rewarded restaurants, also in England and evidently in Italy. Regularly, he returns to beautiful Toscana, where he comes from, and draws his new creative inspirations from this native gastronomic region. Filippo describes his cuisine as a staggering fusion of Mediterranean style, personal taste and his work experiences around Europe.

Filippo Licata embarked VIP cruises on luxury yachts on the Mediterranean Sea and around the Versilia Coast - the Italian “French riviera” - where he has delighted illustrious personalities including Russian millionaires, and started a business of a home-catering for high discerning guests. This is through these activities that Filippo has been lead to serve Stefano Gabbana - world famous designer, tenor Andrea Bocelli and football player Luis Figo. There, Filippo has also met the Russian associate, who fell in love with his amazing cuisine and offered him his first work opportunity in Moscow, as chef de cuisine. This former experience allowed him to know exactly what Russian guests are expecting in terms of cuisine, and of Italian specialties in particular.

With such an international and remarkable background, his collaboration with Grand Hotel Europe is a real asset for Rossi’s and its guests. Creative, Filippo Licata will completely renew the current menu in a Mediterranean and unique-in-the-city Menu, by the quality of seasonable products and by the homemade fresh pasta, focaccia and pizza stemming from Italian recipes.

He’ll bring guests the Versilia style – the favorite way of life of wealthy Russian in Italy – being known as fashionable, exclusive and healthy. Innovation will also meet traditions, as more conventional dishes would also be proposed. Very demanding, Licata expects that fine connaisseurs will leave Rossi’s, wondering if they’re in Russia or Italy…
