Dominique's Chocolate

The Grand Hotel Europe’s chocolate factory is an original chocolate laboratory where new recipes are created by our Executive Chef, Dominique Ferchaud. The factory has elaborated remarkable and delicious selections of exquisite chocolate and sweets, as well as amusing chocolate figurines. Any customer can create its own unique selection from the whole assortment available at the chocolate bar.

One of the chocolate selections available consists of chocolates filled with traditional Russian fillings:

• Pepper vodka and banana
• Lemon vodka and cherry
• Mandarin vodka and chestnut
• Blackcurrant vodka

Customers can also choose chocolates with tropical fruits, pistachios and cinnamon, coffee creme and Baileys, coconut and Malibu, and almond praline and spices.

The main ingredient is a rare kind of chocolate imported from the Belgian raw chocolate manufacturer, Barry Callebaut. This unique chocolate ingredient is made from an original blend of cocoa beans, produced in very limited quantities. It is said that the amount of this chocolate in world production has never exceeded 2%.

All the above delicacies are made from three kinds of chocolate: Americana’s, Africana’s and Asiana’s, produced in various parts of the world. Americana’s is produced in San Domingo, in Haiti, and contains 66.7% cocoa. It distinguishes itself by its piquant, rich taste and fruity notes. This new and original kind of cocoa appeared thanks to a chance interbreeding between two different kinds of cocoa tree, forastero and criollo, abundantly growing in the rich and fertile soil of this region.

Africana’s is formed from two kinds of chocolate extracted in San-Tome (70% cocoa) and Tanzania (75% cocoa). The first kind is unique by its bouquet of gentle aromas of flowers and herbs, while the second type is a particularly valued and rare chocolate and has a light fruity taste with notes of vanilla.

Asiana’s is also a blend of two different chocolate kinds. The first delectable chocolate (35.7% cocoa), which is made from cocoa fruits from the forastero and criollo trees from the island of Java, is distinguished by its special colour, shot with pinkish-honey hues. Every plantation yields its own unique aroma of cinnamon, caramel and nuts. Its refined aroma carries with it the subtle notes of Tahitian vanilla and a gentle piquancy, forming a taste that is unusually fresh and smooth. The other, an original milk chocolate from the island of Java (32.9% cocoa) is noted for its taste of caramel and delicately tart aftertaste.
